He did them as it was prophesied thousands of years before Him. For example the miraculous feeding of the 5,000 is connected with the providence of manna in Exodus. The virgin birth is connected with Isaiah 7:14. The entirety of Isaiah 53 connects with Christ's life, suffering and sacrifice, down to the detail of Roman soldiers casting lots for his robes. The words he uttered on the cross connect to Psalm 22. The miracles are literal, and they happened for a reason, so we may reflect upon it and learn from them, that's where the symbolic meanings come from. For example when Jesus allowed Peter to walk on the sea together with him, first Peter was able to walk on water too, but as he lost his focus and started doubting he began to sink and cried out "Lord, save me", and Jesus catches him with his hand. There is a literal miracle and also something to reflect on, as we start losing our faith in our walk we begin to sink deeper and deeper, and the one who can save you from this sinking is the Lord.
Also, you must understand the chain of events here. The reason the pharisees wanted Jesus crucified was because he was becoming too popular. And the reason he was becoming too popular was because he was performing these incredible miracles, creating matter out of nothing, healing, even resurrecting dead people, casting out demons in front of everyone, prophesying and more. Whichever village he traveled to, people trampled on each other to have a chance to meet him, this is because the miracles were real. Had the miracles not been real, he would not have been able to gather such a following in such a short time and become so popular among the people, and He wouldn't have been crucified as a result.
